Very Merry Beer

After some tasty but boring IPA and Brown Ale, I figured I'd try a spiced beer for the season.

Just a generic Ale as a base and then some holiday season spices in the last 10-15 mins of the boil.

  • 3.00 lb Amber Dry Extract (12.5 SRM)
  • 3.00 lb Extra Light Dry Extract (3.0 SRM)
  • 1.00 lb Crystal Malt - 60L (60.0 SRM) (steep 30 min - 160 F)
  • 2.00 oz Pearle Hops [5.10%] (45 min)
  • 1 tsp Allspice (Boil 15.0 min)
  • 4 Cinnamon (sticks, broken in half) (Boil 15.0 min)
  • 1 tsp Nutmeg, Sweet (Boil 15.0 min)
  • 5.00 tsp Vanilla (Boil 10.0 min)
  • 2 Pkgs Dry Ale Yeast (Windsor)


The spice measurements are VERY approximate on the conservative side.

Brewed 11/10/2007. I was aiming for 2-3 weeks before bottling but that turned into 5 weeks for various inexplicable reasons. Bottled 12/8/2007.

Cracked first one 12/21/2007... NOT ready :(

However, it was ready 1/2/2008. I missed Christmas because of the additional time before bottling, but it was definitely worth the wait :)
